Oaxacan kitchen. Lucha libre soul.
El Santo started with a simple frustration: Bangkok had plenty of Mexican food, and not much Mexican cooking. So we built a kitchen around a Mexican chef and let him cook the food he grew up with. Then we filled the room with the other thing Mexico does better than anyone — masked wrestlers, loud music and a crowd that gets involved.
The kitchen
Chef Daniel Calderón Camacho leads our kitchen, cooking the food of Oaxaca — the region most Mexicans will tell you is the country's best table. Oaxaca is mole country. Sauces built from dozens of ingredients, toasted and ground and simmered for days. It is masa country, where corn is nixtamalised by hand and pressed fresh. And it is mezcal country, where agave is roasted in earth pits and distilled in villages that have done it the same way for generations. That is what we cook. Not a lighter version, not a local adaptation. The real thing, with the time it takes.
The room
120 seats across three spaces, each with its own mood. The dining room is where the food happens — bright, colourful and built for sharing plates across a crowded table. The outdoor courtyard is the spot for a long evening as the heat drops. And the bar opens at six, for mezcal, margaritas and anyone who came for the night rather than the meal.
